I just made the best chilli chicken soup ever!

Recipe:

Spicy Chicken Soup (Taken from a bicycling magazine)

Ready in roughly 2 hours including preparation etc
Makes 8 full servings
1848kilojoules; 49gr carbs, 30gr protein, 14gr fat

Ingredients:
  • 2 Litres water
  • 8 Skinless, de boned chicken breasts
  • 1/2 teaspoon garlic powder
  • 2 teaspoons dried parsley
  • 1 teaspoon onion powder
  • 3 cubes chicken stock
  • 1 onion, chopped
  • 3 tablespoons olive oil
  • 1 (450gr) tin tomato and onion
  • 2 (450gr) tins peeled and chopped tomatoes
  • 1 (400gr) tin tomato soup
  • 3 teaspoons chilli powder
  • 1 (450gr) tin whole kernel corn, drained
  • 1 (450gr) tin Koo baked beans in jalapeƱo chilli, un drained
  • 1 (250ml) sour cream
  • 3 cloves garlic, chopped

In a large pot, over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder and stock cubes.
Bring to a boil, reduce heat and simmer for 1 hour.
Remove chicken and shred it, keep the broth.

In a large pot, over medium heat, cook onion and garlic in olive oil until slightly browned.
Stir in tomato and onion, chopped and peeled tomatoes, tomato soup, chilli powder, corn, beans, sour cream, shredded chicken and 5 cups of the broth you kept aside.

Bring to the boil and simmer for 30mins.
