Quick question: After polishing the headlights like that, do you then have to treat them with something? I remember reading they needed an anti uv coating or something like that....

As for protecting headlights, yes, we should seal them. I wish the pros could chime in with more insight. I've seen one of Paul (Accident Guru) do a very fine job on headlights.
But unfortunately i didn't coz don't any product for this right now.
I've read some detailers use Megs PlastX, while Todd Cooperrider uses 303.
